How to Make Kiwi Cheesecake Shots

The best thing about these Kiwi Cheesecake Shots are how quick they are to make and how absolutely delicious they are. Because they are in shot glasses you needn’t feel guilty about having a couple – or more. The crumbly base with the sweetened cream cheese and tart fruit are a wonderful combination.

This quick and easy dessert can be made on short notice so it’s a winner all around. You can also assemble the dessert in larger glasses if desired.

Ingredients:

200g Cream Cheese

3 tbsp Icing Sugar

10-12 Shortbread Biscuits

4 Kiwis

Place the shortbread biscuits in a clean plastic bag and crush them with a rolling pin. Alternatively, place them in a food processor and blitz.

Place the cream cheese and icing sugar in a bowl and whisk until soft. Put the mixture into a piping bag and snip off the end. This will make it easier to get into the shot glasses.

Then peel the kiwis and make a puree in the food processor.

Finally to assemble, place teaspoonfuls of the biscuit into shot glasses and pipe some cream cheese on top. Finish off with teaspoons of the kiwi puree. Chill for approximately 10 minutes and serve.
